Our Story

The Bonac Spirits Distillery is a small family distillery based in Newtownmountkennedy, owed and operated by a father and son team.

The Bonac Spirits Distillery was started by father and son team, Michael and Gavin Clifford. A long time shared passion, Michael and Gavin toured many distilleries wanting to discover how great spirits were made, who was making them and hear the story of the people behind the brands. They had often bounced business ideas off each other, and were always on course to open a family business when the time was right.

After graduating college, Gavin emigrated to the U.S. and was inspired by the craft drinks movement there while working in the hospitality industry. After many phone calls home to Michael discussing the possibilities, the pair realised they may be able to turn their passion into a business.

Gavin returned home, and they immediately began to research their new adventure. In 2016, they set up the business, started to build out the distillery which is located in Co Wicklow, and began to develop their first product, an innovative Irish gin.

The Bonac Spirits Distillery is a true family owned, handcrafted spirits distillery.

Authenticity, quality, family and innovation are the core values adhered to at the distillery. Having visited many distilleries in the past, and with more knowledge than the ordinary visitor, Michael and Gavin were able to tell when a guide may have been embellishing the truth a little bit.

They decided to put authenticity and transparency at the fore of their brand because they wanted consumers to see what really goes into making great spirits. As such, they endeavour to share their hands-on production, ingredients, and bottling processes.

As their first product was a gin, they didn’t want to be “just another Irish gin”. They have created something profoundly different, by using their personal experiences and stories to create their spirits, rather than sticking solely to the history books and tradition.

True to their core value of authenticity, they named the company, and their gin, Bonac Irish Gin, pronounced {bon-ak}, after the Accabonac Harbour on Long Island. Gavin spent time living, working, and socialising here during the summers he spent in the United States. Making life long friends, and truly connecting with the area, he has used these fond life memories to inspire the branding for the the distillery and the flavour profile for their original Irish gin.
